LENTIL SOUP

Spicy Soup

3/4 Cup (3.5 oz / 99g) Lentils 5 oz (142g) Celery 1 Large Carrot (5 oz / 142g) 1/2 Bunch (1 oz / 30g) Parsley 1 Onion 2 Tbsp Vegetable Oil Curry Seasoning Ground Chili Pepper, Salt PREPARATIONS: 1- Grate the onion and carrots. 2- Dice the celery. 3- Mince the parsley. DIRECTIONS: 1- Transfer the lentils to a small pot, add enough water to cover the lentils 1 inch deep. 2- Cover the pot with a lid (leave a crack open for steam to escape). over medium-low heat, simmer lentils for 30 minutes or until all the water evaporates thoroughly and the lentils fully cooked. (Add more water and continue simmering if needed). 3- Fry grated onion in vegetable oil until translucent. 4- Add curry seasoning and ground chili pepper to the fried onions. 5- Stir in diced celery, grated carrot and minced parsley. Allow one minute to fry in between each ingredient. 6- Add a pinch of salt. Pour in enough water to cover all of the ingredients. 7- Cover the pot with lid and simmer for 15 minutes over medium-low heat. 8- Stir in the cooked lentils to the mixture. 9- Stir thoroughly and simmer the mixture for 5 more minutes.
