2 lbs Tilapia Fillet 2/3 Cup Bread Crumbs 1 Lemon 1 Orange 1 Tbsp Brown Sugar 1 Tbsp Corn Syrup Lemon Zest (1 lemon) Orange Zest (1 orange) 3 Garlic Cloves 1 Tbsp Unsalted Butter 2 Tbsp Unsalted Butter 1/2 Tsp Cumin Paprika Black Pepper Chili Powder Salt 0.5 oz (14g) green onions Preparations: 1- Grind the cumin. Directions: 1- Combine lemon zest, orange zest, bread crumbs, paprika, black pepper, chili powder and a pinch of salt. 2- Deep the tilapia fillets in the mixture to cover both sides. 3- Fry the tilapia fillets with butter for 5 minutes (each side) until well fried. GLAZE: 4- Squeeze fresh lemon and orange into a saucepan. 5- Mash in garlic cloves. 6- Stir in butter (2 tbsp), and ground cumin. 7- Add brown sugar and corn syrup. Stir thoroughly. 8- Bring the mixture to a boil and continue simmering for 10 minutes or until thickened. 9- Pour the glaze over the fried tilapia when serving. 10- Garnish with green onions.
