Blueberry Salad
1/2 Cup (3 oz / 85g) Blueberries 3 oz (85g) Baby Spring Mix 3 oz (85g) Feta Cheese 1/2 Red Onion 0.5 oz (14g) Pumpkin Seeds 1 Lemon 1 Tbsp Honey 1 Tbsp Pomegranate Paste 1/4 Cup Olive Oil Salt and Black Pepper Preparations: 1- Dice the onion. 2- Crumble the feta cheese. Preprations: 1- In a large bowl, Combine baby spring mix with onion, feta cheese, pumpkin seeds and blueberries. DRESSING 2- Squeeze a fresh lemon in a separate container. 3- Add honey, pomegranate paste, olive oil, salt and pepper. 4- Stir the mixture thoroughly. 5- Stir in the dressing to the salad and serve.
